Zucchini is one of the very healthy veggies that you can introduce to your child. It has a high content of vitamin C, carbohydrates, protein, and fiber. It contains significant quantities of potassium, folate, and vitamin A. In shoer, its a power veggie.
Ingredients:
1 Zucchini
1/4 tsp salt
2 tsp all-purpose flour
pink of black pepper
1 tbs cheddar cheese (optional)
1/4 tsp baking powder
very little oil to shallow fry
1 zucchini (grated with skin) – try to use organic veggies when and if you can (specially for the little ones)
Add 1/4 tsp salt (now leave it for 30-40 mins, it will leave water on its own. Now squeeze the water out of the zucchini with the help of hands or cheese cloth). Zucchini leaves a lot of water, as shown in the pics below.
And add 2 tsp flour, pinch of black pepper, 1 Tbs of cheddar cheese and 1/4 tsp of baking powder
Mix all the ingredients and make flattened patties. Shallow fry them for 5-6 mins on each side until it has a nice brown colour.
I serve it with some boiled rice to my 15 months old but add 1 chopped spring onion (only green part) and a pinch of red chili powder. Make them and serve with sour cream for an adult yummy version of it!!
